French Burgers with Avocado Sauce

Tarragon, parsley and capers give a 'French' flare to these burgers. The Avocado Sauce is a nice switch from ketchup, or other 'red' sauce and works perfectly with the tart capers. The Avocado Sauce is also great as a pasta sauce.
Ingredients:
- 12oz ground beef (mince), 350gr, 12.3oz
- 1 tbs snipped fresh tarragon substitute 1 tsp dried
- 1 tbs snipped fresh chives, substitute 1 tsp dried
- 1 tbs snipped fresh parsley, substitute 1 tsp dried
- 2 tbs capers, 17.2gr, .6oz
- 2 tbs dry bread crumbs, 14gr, .5oz
- 3 tbs white wine, 45gr, 1.5oz
- 1 tsp capers, 3gr, .1oz
Instructions:
- Snip herbs.
- Chop capers if large, otherwise leave whole.
- In medium bowl mix herbs, bread crumbs, capers and wine.
- Add beef and mix well - hands work best. Shape into 4 patties.
- Sauté in a nonstick skillet for 4 - 6 minutes a side, depending on how you like them done.
- OR cook on barbecue grill for the same amount of time - until done to your liking. Use a grill basket or pan.
- Serve with large dollop of Avocado Sauce and garnish with remaining capers. (or serve on buns if you like)
Note: If using dried herbs add another 1 tsp white wine
Avocado Sauce
Ingredients:
- 1 ripe avocado, 162gr, 5.7oz
- 1 tsp lemon juice, 5gr, .17oz
- 3 tbs Greek or plain yogurt, 56gr, 2oz
- 1 tsp snipped fresh tarragon substitute 1/2 tsp dried
Instructions:
- Remove avocado from shell and put into a medium bowl.
- Add lemon juice and mash with a fork. Then take a whisk and whisk until fluffy.
- Whisk in yogurt and tarragon. Serve over French Burgers.
