Pumpkin Timbales with Shallot/Prosciutto Garnish

    I use fresh, cooked pumpkin or cooked pumpkin from my freezer.  Use 'Pumpkin Pie Filling' or other canned pumpkin, which should be pure pumpkin with nothing else added.
