Lettuce Salad with Creamy Dressing and Cherry Tomatoes
Total time: 10 minutes
This is a small side salad: to round out the meal. You can add bits of anything you have on hand: like cherry tomatoes and a bit of cheese.
Ingredients:
- lettuce, enough for two small salads, 115gr, 4oz
- 1/3 cup creamy herb dressing
- 1/4 cup shredded cheese - any flavor, 30gr, 1oz
- 1/2 cup cherry tomatoes, 90gr, 3.2oz
- Creamy Herb Dressing
- 1/2 cup plain yogurt, 125gr, 4.4oz
- 1 tbs Dijon-style mustard, 15gr, .52oz
- 1 tbs lemon juice, 15gr, .52oz
- 1 tbs good olive oil, 13.5gr, .48oz
- 1 tsp snipped fresh chives
- 1 tsp snipped fresh basil
- 1 tsp snipped fresh oregano
Instructions:
- Prepare lettuce and put into a medium bowl
- Add a bit of dressing and toss to coat (use tongs, it's easier).
- Taste and add more dressing if desired.
- Cut cherry tomatoes in half.
- Add cheese and tomatoes, give it another toss or two and serve.
- Creamy Herb Dressing
- Mix yogurt, mustard and lemon.
- Slowly add olive oil, whisking constantly.
- Stir in herbs.
