Tuna and Radish Salad

There are still a few radishes left in the markets. We've had our fill of snacking on them (The French eat them for breakfast... with butter) so I added them to this salad. If you have salad left, it's great on a sandwich!
Instructions:
- 6oz tuna, drained, 170gr, 6oz
- 2 hard-boiled eggs, 130gr, 4.6oz
- 1/2 cup sliced radishes, 58gr, 2oz
- 1/3 cup chopped celery, 50gr, 1.7oz
- 1/4 cup chopped dill pickle optional - but I always have it in the fridge in summer, 36gr, 1.3oz
- 2 tbs snipped chives, substitute 1 tbs dried
- 1 tbs snipped tarragon, substitute 1 tsp dried
- lettuce leaves, 62.5gr, 2.2oz
- Tarragon Vinaigrette
- 1 tbs Dijon-style mustard, 15gr, .53oz
- 2 tsp lemon juice, 10gr, .35oz
- 4 tsp white wine tarragon vinegar, 20gr, .7oz
- 1 tsp snipped fresh tarragon, substitute 1/2 tsp dried
- 3 tbs good olive oil, 40.5gr, 1.4oz
Instructions:
- Boil the eggs.
- Combine tuna, radishes, celery, pickle and herbs in a medium bowl.
- Make Vinaigrette: Combine mustard, lemon juice and vinegar in a small bowl and whisk together.
- Slowly add olive oil, whisking constantly to emulsify. Add tarragon and mix.
- Add Vinaigrette to tuna and mix gently.
- Set aside until eggs are done and you are ready to finish. Before serving peel and chop eggs. Add to tuna and mix gently.
- Spoon onto lettuce leaves on small plates and serve.
